Hatch Green Chile, grown in the fertile Hatch Valley of New Mexico, is renowned for its distinctive flavor and versatility in culinary uses. Available in both mild and hot varieties, Hatch Green Chile offers a unique balance of earthy, slightly sweet notes with a robust, smoky undertone that intensifies with heat. The mild variant provides a gentle warmth, perfect for adding depth to dishes without overwhelming the palate, while the hot variety delivers a bold, fiery kick, ideal for those who crave a spicier experience. This beloved chile is celebrated for its ability to enhance a wide range of dishes, from traditional Southwestern cuisine to innovative contemporary creations.
The crop is harvested from late June – late September – one crop per year, allowing for estimated usage to guarantee product throughout the year.
The numbers released by the U.S. Department of Agriculture and the New Mexico Department of Agriculture show that more than 90% of the chile produced in 2022 was of the green variety. The value of the crop was estimated at more than $46 million, about $1 million more than in 2021. (Mar 31, 2023)
